Ingredients

  • 1 teaspoon of Olive Oil
  • 1 smoked sausage, such as Kielbasa or Chicken Sausage, take 1-inch pieces
  • 4 cups Frozen Broccoli, no need to thaw
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Butter
  • 1/4 cup Water
  • 1 cup Red Bell Pepper, sliced
  • 1/2 cup sliced onion

Instructions

  • Heat a medium-sized skillet over medium heat. Add the oil and when the oil is hot add the sausage. Cook the sausage for about 2-3 minutes until brown.
  • Add broccoli and ¼ a cup of water and cover the lid immediately.
  • Remove the lid and strain in the 5-minute mark when the broccoli is melted. Look for the doneness of the broccoli after 7-8 minutes.
  • Add the chopped red bell pepper.
  • Add salt, and butter and mix well. Serve.

Ingredients

Notes

  • Don’t overcook your veggies. I put in the peppers last minute because you will want them to be crunchy.
  • Cooking for the family that isn’t Keto? Simply serve this over a bed of rice.
  • Want to mix it up? Sub the vegetables in the recipe for other Keto-friendly vegetables. Another awesome combo for this recipe is chicken sausage and cauliflower.
