Zucchini boats are a low-carb keto recipe that everyone in your house will follow. This is a great way to use up all that wonderful summer squash (even though we eat them year-round in my house!), discreet-just adds some vegetables to eat for the rest of the family, and all those flavors you love without losing that crispy outer shell.

Ingredients Required

  • 1 lb ground beef or ground turkey
  • 7 tbsp olive oil
  • 2 tbsp Tex-Mex seasoning
  • ½ cup (7 grams) finely chopped fresh cilantro (optional)
  • 2 zucchini (400 grams approx)
  • 1 tbsp olive oil
  • 1 cup Pepper Jack cheese (100 grams), shredded
  • 200 grams (5½ cups) lettuce
  • 4 tbsp olive oil
  • ½ tbsp red wine vinegar or white vinegar 5%
  • salt and pepper as per taste

Step-by-Step Direction to cook Keto Tex-Mex Stuffed Zucchini Boats

Step 1. Preheat your oven to 400 ° F (200 ° C).

Step 2. Divide each zucchini in half, length, and remove seeds. Sprinkle with salt and simmer for 10 minutes.

Step 3. While the zucchini is sitting, brown the ground meat in olive oil in a frying pan. Add salt and Tex-Mex spice. Let it cook until most of the liquid has evaporated.

Step 4. Wipe the drops of liquid with paper towels. Place the halves in a greased baking dish.

Step 5. Add 1/3 ​of the cheese to the ground beef. Add the chopped cilantro (optional).

Step 6. Divide the beef and cheese mixture evenly between the zucchini boats. Sprinkle the remaining cheese on top. Bake in the oven for 20 minutes or until the cheese starts to turn brown. Remove the zucchini and let it cool for 5 minutes.

Step 7. Combine oil, vinegar, salt, and pepper in a simple vinaigrette. Prepare a salad and serve alongside zucchini boats.
