Ingredients Required

The ingredient list to make Keto Salami Egg Muffins, are given below:

  • 4 cherry tomatoes
  • ¼ cup red onion, chopped
  • 1 cup mixed vegetables (spinach is also great!)
  • 8 egg yolks
  • ⅓ A cup of cooked bacon or salami, chopped
  • 1⅕ cup cheddar cheese, shredded
  • 3 tbsp. unsweetened almond milk (optional)
  • ½ tsp. garlic salt

Step-by-Step Direction to cook Keto Egg Muffins

Step 1. Preheat the oven to 400 ° F (200 ° C).

Step 2. Separate the egg yolks from the whites and place the eggs in a large mixing bowl. Discard egg whites or save them for another recipe.

Step 3. Wash and finely chop the vegetables, tomatoes, and onions. Add the egg yolk mixture.

Step 4. Add bacon, cheese (keep 3 tbsp, set aside later), unsweetened almond milk, and garlic salt in a bowl and mix well.

Step 5. Grease a muffin pan with oil or add liners. Pour the egg mixture evenly between 6 muffins, it will take about ¼ cup + 1 tbsp of batter in each muffin.

Step 6. Place the muffin pan in the oven for about 12 minutes or until the edges are a little brown and toasty.

Step 7. Remove the egg muffins from the oven and quickly sprinkle the tops with the set of cheddar cheese.

Step 8. Allow cooling for two minutes before serving.

Step 9. Serve & Enjoy.

Tips to make it more yummy

Tip No. 1. To mix the ingredients, try using different proteins, other types of cheese, or other vegetables. Just make sure you count the new macros to make sure the muffins are still low in carbs.

Tip No. 2. You can also store these egg muffins in an airtight container in the refrigerator for 3-4 days.
